Cheesy Garlic Mashed Potatoes & Brown Sugar Meatloaf

I've been making meatloaf for about 3 years now and amend my recipe with every new attempt. I believe now it's at completion, I won't be adding or subtracting ingredients anytime in the near future. You can simply chop not mince the vegetables, Marty just won't eat the meal if he sees chunks of vegetables on his meat. Normally serve this dish with my altered cheesy garlic mashed potatoes. This is a sweet rendition of meatloaf and I hope you enjoy it as much as Marty and I have.

Prep Time: 10-15 minutes
Cook Time: 1 hour and 30 minutes
Servings: 6

Ingredients:
1.5 lb lean ground beef
3/4 cup Italian bread crumbs
1/4 cup milk
1 tbsp Worcestershire sauce
2 tbsp honey barbecue sauce [I use Jack Daniels brand]
1 egg
1/3 green bell pepper, minced
1/2 sweet onion, minced
3 cloves garlic, minced
1/4 tsp ginger
1/4 tsp paprika
1/4 tsp oregano
1/2 tsp salt
1/4 tsp pepper

Glaze:
4 tbsp brown sugar
4 tbsp ketchup
1 tbsp Worcestershire sauce
1 tsp dry mustard seasoning

Directions:
1. Preheat oven 350 degrees and grease 5X9 loaf pan.
2. Place two slices of bread to cover bottom of loaf pan, the bread soaks up all of the grease that pools while the meat cooks.
3. Mix all ingredients, shape loaf and place in pan over bread.
4. Spread glaze over meat so that it's thoroughly covered, cut a couple of slits in loaf.
5. Bake 1 hour and 30 minutes or once meat looks done. Loaf should slide easily right out onto serving plate with the help of a spatula - you can then remove greasy bread.

Yes, 4-5 slices on top. I've made it that way for my uncle who is crazy about bacon.
